A little brandy will improve the flavor. Blanc Mange. Take i lb. sugar, 1 qt. milk, U oz (U qt. pkt.) of Lady Charlotte Gelatine, the rind of half a lemon 4 laure leaves , put all into a lined saucepan, simmer gently until the gela- tine is dissolved, taste occasionally to see when sufficiently flavoured with laurel, then take out leaves and stir the mixture over the fire for about 10 minutes ; strain through a fine sieve into a jug, and when nearly cold pour into a well- oiled mould, leaving out the sediment. Turn out on a dish, and garnish with preserves or a compote of fruit. Rom Cream- i oz. Strain the cream through a sieve into a basm, stir in 1 oz. <1 qt. pkt.) Lady Charlotte gelatine, and into a mould oiled with salad oil set on ice to keep cool. Ginger Cream Slice finely three ounces preserved ginger, put into, a basin with 2 dessert spoonfuls of sjrup and the well beaten yolks of 4 eggs, with 1 pint of cream. It makes a very nice cake for the basket : — Take one cup of butter, one cup and a half of sugar, three eggs, half a cup of milk, two teaspoonfuls of National Baking Powder, about two cups of flour ; flavor with a little Silverman's almond extract ; blanch one pound of almonds, lay aside enough to cover the top of the cake when they are cut in halves, chop the rest and put into the cake. After the cake is in the tin, lay the split ones over the top of the cake ; they will rise and brow n as the cake bakes. This is delicious ; try it. Wine Biscuits. Three ounces butter, three ounces sugar ; beat to a cream ; eight ounces flour, stirred in with two eggs and enough milk to make a light paste ; beat well, stir in one tablespoonful of National baking powder and some Silverman's flavouring. Have ready some greased baking sheets, drop the mixture on in small spoonfuls. Bake at once, Ave to eight minutes. Put on a sieve till cold. American Lunch Cake. Take half-pound flour, half-cup sugar, half-cup butter, four eggs well beaten, half teaspoonful salt, cup of milk ; mix thoroughly one way ; add Silverman's vanilla flavouring,, pour into a form, and bake in a ^uick oven. Sponge Cake- Take quarter pound of flour, tablespoonful baking powder, both sifted together, two eggs well beaten, half cup sugar, and half cup milk. Mix thoroughly and pour into forms ; bake in a quick oven.
