 The results of previous work on piiiger have beeii synopticised in Bulletin 184, 
 from whidi the following i- ro[irinte<i : — 
 
 'The usual recognized adu ration of ginger consists in the substitution of 
 cheaper mnterials (flour, <tarch, i!i:c.) or in the use of exhausted rhizomes, i.e., stock 
 from which the valuable principles have licen more or less completely removed by 
 washing. The exaniiniitions which form tlie ba^is for reports above referred to, have 
 regard primarily to the iletection of adulteration as described. But each report con- 
 tains an account of more or less inve-tigiitory work, undertaken in the desire to put 
 on record such data regarding ginjrer as should, at some future time, enable us to 
 recommend the adoption of a definition of ginger, based upon its physical and chemi- 
 cal constants, and comi)rehensive enough to warrant its being made legal, under 
 Section 30 of the Adulteration Act. 
 
' A dutinition of ginger recommi-ndcd by the United Stated Food Standards Com- 
 mittee, i» a« follows; — Ginger ig tbu washed and dried or decorticated and dried, 
 riiizonie of Zingiber Zingiiier (L) Kargt., and contains not leM than forty-two (42) 
 IKjr cent of starch, not more than eight (8) per cent of crude tibre, not more than six 
 (U) per cent of total ash, not iiioru than one (1) per cent of lime, and nut more than 
 tiiree (3) per cent of Hi-h insoluble in hydrochloric acid.' 
 
 'Limed ginger, bl' iicnod gingtr, is whole gingi-r, coated with carbonate of linn 
 and contains not more tbuii ten (10) per cont of ash, not more than four (4) percent 
 of carbonate of liue, and conforms in other respects to tin; standard for ginger.' 
 
 The British Pharmacopceia descrilws ginger as ' The scraped and dried rhizome 
 of Zingiber officinale, Roscoe ' ; and gives the physical characters of the rhizome ; 
 but does not mention ground ginger, nor attempt any enumeration of chemical 
 characters. (Edn. 1M)8). Squire's Companion (Edn of 1908) gives the following 
 tests for ginger: — The cells contain resin, (and) pyriform compressed starch grains 
 12 to 40 mem. long, appeiaring linear when seen laterally, having the hilum at the 
 • tnallcr Pill! ; thin walb-d. pdlyzmial pan'iicbyniutous cells, and sonietimos septate lia-t 
 ibres with irregularly nodose extremities. When unbleached yields 3 to 4 per cent 
 ash, an<l 5 per cent should not be exceeded. Not less than 1-5 per cent soluble ash. 
 Extractive matter to cold water usually about 10 per cent und should not be less than 
 8.5 per cent; the extractive mutter soluble in !K) per cent alcohol usually amounts to 
 aliout 5 i»er cent and should not 1 • materially below this figure.' 
 
 It is apparent, from tiuse eitai..pns. that wo hove but a very vatrue and indetiiiite

 the research wor' jrted in the bulletins from this laboruttry. 
 
 Bulletin No. -^ contains photoniicrogrnphic reproductions of genuine and adul- 
 terated gingers, magnified 22.5 diameters, and seen under polarized light. The differ- 
 ences between ginper starch, and such starches as are commonly employed in adulter- 
 ation of ginger, are well shown. 
 
 A synoptical talde of published results in the chemical examination of ginger is 
 furnished, and the following conclusion reached. ' An examination of these results 
 shows that no sinple component of ginger is sufficiently constant in amount to make 
 the identification (if a sample as genuine pos^'ible by its means.' 
 
 Analytical numbers concerning 9.S samples include moisture, cold water extrac- 
 tive, total ash; and in certain cases, petroleum ether and alcohol extractive, soluble 
 ash, and alkalinity of ash. 
 
 Samples are only condemned as ailul ises where foreign starch in 
 
 amount exceeding 10 per cent is found. 
 
 Bulletin No. 95 rejjorts only 10 samples md ginger; giving moisture, cold 
 
 water extractive and results of microscopic twccu. nniion. One sample is condemned 
 as containing wheat starch. Three others ar cajV-d in question as giving only 14-1. 
 15-3, and 14-9 per cent extractive to cold water. These probably contain exhausted 
 ginger, since similar extraction of genuine samples afforded nearly or quite 20 per 
 cent of extractive. But it would be safer to describe these samples as ' doubtfully 
 genuine ' than as adulterated. 
 
 The details for cold water extractioii of ginger are given (pp. 24 and 25), and 
 the analyst adds: — 'I have not met with an authenticated sample of ginger which 
 gave less than 19 per cent of extractive to cold water, when treated as described.' 
 
 Bulletin No. 187 reports upon 30 samples, of which 29 appear to be genuine, as 
 judged by microscopic characters, and the cold water extractive, carried out by the 
 process described above. Extraction amoimts to above 20 per cent by weight on the 
 dry ginger, in most samples, and in several reaches 24 per cent. 
 
 A consideration of all work recorded for ginger leads to the conclusion that 
 microscopic examination and determination of cold water extractive are quite the 
 most valuable tests that can be applied to tlie ground ginger of commerce. Deter-

 weight. Thi-> method is less efTeclive in exhausting the ginger, but hait the advantage 
 of beinff available in laboratories not equipped with tlie inei'hanieul devices required 
 for carrying out the rir^t method described. The normal extractive, by this method, 
 appears to l>e about 15 or Iti per cent of the weight of the ginger (dry). 
 
 It is interesting to note that the low exlriictivc recorded in the accompanying 
 table, for certain oamples, is usually corndafed to the proserice of foreign starchy 
 matters. Where a l<iw extractive is n<a explained by presence of foreign starch, the 
 only explanation available would seem to \te the irevious extraction of the rhizome. 
 
 The re<|uirements of the British Pharmacoixri^i in the irmtter of extractive would 
 appear to be onlircly too low. 
 
 I have not seen any inve«ti>;fltory work on gi ifcr ^ince liK>!», which materially 
 alters the conclusions above recordeil. 
 
 The cold water extractive in the samples now rei«>rted. has lieen made by the 
 same method use<l in I'.Mlletin IM. and normal sample* should vield about 10 percent 
 of extractive, calculated iiixm the dry material.
