 Sir —I beg to submit herewith a report dealing with thirty (30) ganiples sold as 
 condensed milks— of which number seven (7) are condensed without sugar, and 
 should be offered as evaporated milk (see G. 934) ; and fifteen (16) samples of milk 
 
 DOW QGT8 
 
 Condensed milk is required by Order in Council of November 3, 1910, to meet 
 the following requirements: — 
 
 ' Condensed milk is milk from which a considerable portion of water has 
 
 been evaporated, and to which sugar has been added. It contains not less than 
 
 28 per cent of milk solids, and not less than 7-7 per cent of milk fat. 
 No. 49150 contains only traces of fat; and is made from skimmed milk. 
 No. 38335 contains only 3-85 per cent of fat, and is made from milk which has been 
 
 partly skimmed. 
 
 The labels of these samples claim that they are genuine whole milk products. 
 Hence they must be regarded as adulterated under the Act. 
 
 In three samples (Nos. 49146-7-8) the fat is shghUy below standard Ihe 
 defic^Tnct howe'K aie not great, and may not exc^eed such -tural vanation. « 
 season and locality introduce. In eight (8) samples the fat vanes from 5-80 to 7^12 
 Sr cent These must be regarded as adulterated under the Act, although they 
 ^present brands which generally give a good account of themselves. It is to be 
 noted that, even within the limits of the present collection, the average results for 
 such of these brands as are represented by several samples is creditable.

 Evaporated milk is defi: d as follows:—

 ^o. 38.i33, which falls 0-70 too low in fat, and 2-23 loo low in milk solids.

 • ream. The explanatory words ' An unsweetened condensed milk,' appear in small 
 type upon the label, but are comparatively inconspicuous. 
 
 Our standards require cream to contain at least 18 per cent of milk faf and 
 condensed cream to contain at least 25 per cent of fat (G. 934). ' 
 
 Milk powder is defined by standards published in December, 1910, (see 0. 934) a. 
 follows : — 
 
 The soluble powder product made from milk, and contains, unless otherwise 
 speci.ed,^ not less than ninety-five (95) per cent of milk solids, and not less than 
 twenty-six (26) per cent of milk fat. 
 
 All samples obt ined by our inspectors appear to be the products of one manu- 
 facturer, and to be sold under the names Trumilk- and Milk Stock, the first being a

 whole milk product; the lecond • (kimined milk. A lingle (ample (No. 441CJ) mU 
 M modified milk powd«r, repreeenU an intennediate product, the r«ault uf drjrint • 
 partly akimmed milk. 
 
 Ten eamplea told at Trumilk and guaranteed at whole milk powdiri averagee 
 26-76 per cent of fat; and vary among themtelvea at follow*:— 88-10, 27-61, 97-68, 
 87-4«, 87-86, 27 2S, 26-84, 86-61, 25 66, 23-22. With exception of thj last two aamplea 
 they meet the requirementa of our ttandard; and the deficiency in t'le ninth lample 
 it le*i than one-half of one per cent 
 
 One lample onb' (No. 38386) falU more than one per cent below tlio atandard» 
 (deficiency: 2-78 per cent) and it evidently manufacture! from a milk of inferior 
 quality. 
 
 Milk itock (ikimmed milk) appeara to be of Teiy uniform quality, and it true 
 to the olaima made for it 
 
 The colle< .ion herein wai made in April and May of Ia«t year, and tliould have 
 been reported long ago.
