Donaldson, Escj., Surveyor of those Light Houses in the Bay of Fundy belongin«( to New Brunswick; and alno of those belonging t9 Nova Scotia, which are partly supported by New Brunswick. Cape Salde Seal Island LiirJu.- — The first Eight in approaching the Bay of Fundy, is on the South Point of the Seal Island. This is a plain white Light, elevated about 80 feel above high water mark, and may be seen in approaching the Island from any point of the compass. A very dangerous rock, under water, but upon which the sea always breaks, called Blonde Rock, lies about 2 miles S. S. W. by compass, from the Light House. Between this rock and the Island, there are some dangers — the ground is rocky throughout, and large vessels, therefore, ought not to attempt passing between them. Brier Island Light. — In advancing up the Bay, the next Light is si- tuated on Brier Island, about half a mile N. E. from the N. W. point thereof A plain white light. Dighy GiU Light. — The next light on the coast of Nova Scotia is placed side of the Digby Gut— from Brier Island N. Eastward. The coast is very bold and not indented ; the Light is therefore chiefly intended as a guide info Digby Basin. The Lamps and Lanterns were renewed in the Spring of 18'i5, and reflectors furnished, so that this Light is in high order — AVhite Light. Gannet Rock Light. — This Light Ijears from the Light on Brier Island, N. W. || W. 21 miles. It is intended to warn vessels of their approach to a very dangerous range of shoals and ledges, which ex- tend from the Old Proprietor to the Seal Islands off Machias, a dis- tance of about twenty miles. i.j Bearings from thn Gannet Rock Light House — To the Old Propri«;tor, which dries at | ebb; (very (dangerous), E. by N. i N. 7 miles. Point Le Preau Lights. — Upon this projecting head land two light? are jjlaced, one above the other, and distant 28 feet. — Both lights i can bo seen from every point of the compass, where they may be use- j fnl — both are fixed nnd white. In consequence of orders from the jj Home Government, this Light was, in 1840, painted red and white,} in stripes of five feet broad each, horizontally, jh "rder that it may be seen more distinctly at a distance. Partridge Island LiglU. — This light, at the entrance of the River and Harbour of Saint John, having been established npwards of forty years, requires no particular notice, further than that itis^a fixed white , light, and that the Light House is red and white, in vertical j stripefl. j Beacon Light. — Within Partridge Island, and upon a Spit or bar, J i which extends about half a mile S. S. E. off Sand Point, and which dries at two-thirds ebb, stands the Beacon Tower. Upon thia Tower j a light is established, which is eminently useful to the coasting trade { of Saint John, and to all other vessels having pilots on board, as it en- 1 ables them to enter the harbour at all hours of the night. A/>ple Dread. — A very light pleasant bread is made in France, of u mixture of apples (wJiun pared, eored and baked, or stewed vvitb a very little water,) and flour, in the |iro|>ortiun of one part of apples to two of flour, employing the usual quantity of purified yeast, which must be beat up in the flour with the warm pulp of ; the apples. The sponge may then be eonsidered set. Let it rise eight or ten hours, then make it up, and bake it in long loaves like rolls. Little or no water is necessary. Potntoe, Bread — To fourteen pounds of good sound flour, eitjier coarse or fine, take five pounds of potatoes, parcul and washed very clean ; boil them in a proper (|uantity of water till (piite soft ; mash them, and rub them through a wire sieve into the middle of the flour, adding wat^r siiflieient to make it of a proper heat, and some salt ; when well mixed, add a due proportion of yeast ; let J it rise an hour or more in the sponge ; and then knead it well. Ijet it stand to rise an hour or longer, according to the quantity, and bake it in the usual manner. Clu]} Bread. — Mix well some oatmeal and water, of about the same cimsistence as common dough ; tlien roll it into cakes as thin as possible ; bake thenj on a stone or iron plateof a moderate heat \'- over the fire ; when baked on both sides, set them on one edge before the fire till perfectly dry. This bread will continue good many weeks, if kept in a dry place. Bread Pudding. — Take a loaf of white bread, cut a hole in the bottom, add as much new milk as it will soak up ; tie it in a cloth, and boil it an hour. An,ctlier. — Take three pints of milk, one pound of baker's bread, ;■ four large spoonfuls of sugar, and three of molasses; put in a layer of bread cut thin, then a few raisins, then bread, &c. ; pour on the milk and sweetening. If baked one hour and a half, it is suflicient. If boiled, two or three hours. Boil it in a tin pudding boiler. Newly invented Pudding. — Take some good sweet apples ; wash and core, but do not pare them ; chop ihem as fine as cranberries, put them in a kettle, and put in just enough of good milk to cover them, and if you choos'e add a little salt ; some even add a little cinnamon of ginger. Next, proceed to scald them, but without burning them, and 7/7/u/c scalding them, kitir in fine Indian meal enough to form the milk into a thin batter; then put the mess into a deep pan, sot it into an oven or stove, well heated, and bake it about six hours. Potatoe Pudding. -^-TwQ pounds of potatoes boiled and mashed, one pound of wheat meal and a little salt; mix well together into n stifl' paste; tie it in a wet cloth, djusted with flour. Boil it two hours. Arroxr-root Jelly. — Stir a table spoonful of arrow-root powder ; into half a cup of water, pour it into a pint of boiling water, and let it cook six or eight minutes. Sweeten it to your taste.
