The amount of Salicylic Acid present is .so considerable that its inconipletp removal by Oxidation led to the error mentioned. This datum is nf little value, considered in itself, but in its relation to total extractive by cold water, it must be regarded as eiwential. The a-1 Content of ginger depends nuich upon the way in which the rhizonie? are cleaned before grinding, and is of course, greatly influenced by the presence of lime used as a coating of th( rhizome. This practice is quite common, and mn?t be held to account for the extremely variable amounts of total mineral residue obtained (■!! incineration. Tin; most imix-rtant datum for judging adidteration by addition of spent ginger is the perceiitage of cold water extractive. The exhaustion of ginger by water entails loss of soluble salts, and consequent reduction of water sfduble ash; so that a lowered water extractive is usu.illy accom- panied by a lowered soluble ash. The following etudy illustrates the effect of previous extraction upon the ash percentage. In the light of our knowledge that African ginger may yield less than 14 jwr cent of extractive matter, it would he going too far to conclude that all the samples reported in Table IV are adulterated, or even suspicious; but it is to be remembered that our experience with low grade gingers, vouched for as genuine, is extremely limited. I shall endeavour to secure data in regard to this elates of gingers, as soon as po^silile. Samples showing less than 10 per cent extractive are, however, so entirely e.\(op- .tional that it is imi)ossible to regard them as free from admixture of spent giniier. Under this head must lie reckoned two samples reported in Bulletin No. 184 and tour samples included in the present report. In all these ciises the soluble a.sh is notuldy Jess than one per cent. Adulteration of ginger by admixture of foreign matters is apparently giving phicn •to adulteration by the use of sjient ginger. This latter mode of adulteration is much -more ditScult of detection than the former; and the following statement appciirs to show that it is rciliicinir the cruder one. This fact tells against the retailer who certainly bought his stock-in-trade at a lower price than he would have paid for high grade goods.
