 n( nitrites in bleached Sour to lie 6 3 per million. Is it possible to fix a limit of nitrite 
 iilx)ve which it shall be safe to declare ' this flour has been bleached.' Oi ..f the 223 
 ssriipicH now reported, 148 give no reaction for nitrites. 
 
 Of 75 samples which show measurable amountH of nitriten, 2.") ior,tain not more 
 than 1 part per million, leaving 50 samples, or 22 per cent of the tot«l collection, to 
 contain above I per million of nitrites. 
 
 In the following tabulation of results, it must be undemtooil tl at the otatemenU 
 of fact given are intende<l iis a basis for the discovery and enunciation of u principle, 
 and are not to be taken iw a«ceruine<l evidence for or against bleaching, or as atfirroing 
 or negativing the fact of bleaching in a particular case. It is amply evident thut the 
 lileiiching of tlour by oxides of nitrogen has resulted from a popular demand for white 
 tloui , and a conviction on the part of the millers that they were meeting this demand 
 ill 11 jRi-fectly harmless manner. Whether or not any danger to public health results 
 trum bleaching flour by oxides of nitrogen, is i. most imjiortant (juestion, and one upon 
 which judgment is reserved. Of this we may feel perfectly sure that should a decision 
 1)6 reiiched, upon scientific grounds and so clear as to justify the prohibition of oxiden 
 ut nitrogen as bleaching agents, the larger millers will be found prompt to recognize 
 Mwli decision and to live up to it. 
 
 Ill the meantime consumers who object to taking any risks, and who want to know 
 tliat no fundamental change in the character of a food stuff so important as flour, can 
 m lur without their being made aware of it, have a right to be informed whether a 
 tlour ort'ered theiu has been treate<l with oxidi-s of nitrogen, or not. It is therefore 
 ■ lesirable that, if possible, limiting sUndanls should be set, as follows :— (1) A definite 
 ontent of nitrite reacting nitrogen in (lour, ...eding which we may feel justified in 
 saying 'this flour has been bleached by oxid-.s ot uitiogen;' (2) a maximum content 
 of nitrite reacting nitrogen beyoml hich we may con lude 'this flour is O-bly 
 d.tn^eruus to health.'
