 Sill,— In accordance with your inatructionn of Nth January last, a collection was 
 made of Jains and Jellies, in the course <if that and the fol' .wing mont: in the various 
 collection districts of the Dominion. The accompanying tal)ulate<l sUtement (I) mves 
 fu particulars regarding the origin aiul character of each sample in the crder as 
 collecte<I by the various food inspectors, and as the districU succeed each other from east 
 to west. Table I also contains the final result of examining each sample briefly stated 
 bv Mr. A. McGill, who, assisted by Mr. Alnhonse Lemoine, carried out the analyses 
 Ti.e details of the 'atter are given in a series of additional tables in which the vanous 
 samples have lie . classified according to their nature as follows : 
 
 A. Raspberry jam. 
 
 B. .Strawlierry jam. 
 C Plum jam. 
 
 I). Peach jam. 
 
 E. Miscellaneous jams. 
 
 F. Jellies. 
 
 The analytical i-esults given in these tables regarding the samples may be connected 
 with the descriptions given in Table I by means of each serial number. 
 
 The total number of samples collected was 78 but five consisted of "jelly powders " 
 which cei-tain food inspectors purchased by mistake. The number should therefore be 
 73 but, as a matter of fact, 74 analyses were made owir,g to sample 2,410, the duplicate 
 of which did not correspond in character with the rr.iin sample. The following state 
 ment is a classification of the whole 74 samples, based upon the analytical results it 
 being considered that the presence of fore.v., fruity or large percentajfwt of jiluoose

 dextrioe, starch, water, itc. Every grtx-er and consumer understands ()uite well what is 
 m(«nt by sugar, and the substitution of commercial glucose for it in onlinary tratle 
 would not 'ne tolerated. It is also to l>e i'enieml>ere<l that reputable manufacturer)) of 
 jams and jellies use only cane sugar in preserving. 
 
 Similar views to the foregoing prevail in other countries and mure especially among 
 the B<wi-ds of Health in the United States. 
 
 In general the rulings of the latter are to the effect that fruit jellies, preserves, 
 canned fruits Ac, must consist of the fruit s|>e«'ifie<l on the lal)el of the package, pre- 
 iierved oi»lv with cane sugar, and nmst not contain artificial Havours, colouring mattent 
 or preservatives. If such articles contain any sulwtitute for the fruit, or any material 
 to make bulk or weight they are considered to In? adulterated.

 (1) that no rem-tion for starcli was ){iven by any of the fifteen jelly samples examine<l • 
 (i) that fruit pulp was found in the following saiiiples : J* )42!», -.'0130, 23291, L'3806, 
 23S2<I, 24405, 2440M ; (3) that the ash of all samples j;ave very distinct reactions for 
 sulphuric acid, and very faint reaction for hydrochloric acid. 
 
 The alwwnce of pulp in jelly is not pixtof that it is not made from fruit, be<-ause the 
 fineness of the texture of the .jelly-l»ag strainer, and the care ^ith which it has been 
 used, ail' factors in the cose. 
 
 The following samples apjiear U> be genuine, in the sense of being made with cano

 glucose found cannot lie t-ondennied, and it is claime<l by manufacttlre.s that the addition 
 of small amounts of glucose is desirable to prevent crystallization of the sugars : a (U. 
 8. Bulletin 60, p. 78) <laim, however, which apjiears to lie without justification In fact. 
 
 The following «ini|iles are adulterate<l in the sense that glucose has lieen largely 
 used in their manufacture, instead of the more expensive cane sugar ■ — Xfw 20431 •'3-»90 
 2;lit2.5, 23934, 2440.5, 2492--) ami 25021. Of these samples, 20431, 2.3925, 239.34 anc! 
 25021 contain salicylic acid ; ami 23290, 2392.5, 239.U and 24925 ts.ntain aniline dyes. 
 Xo. 20429 is a genuine fruit jelly, but contains salicylic acid. This is ;uite unnecessary 
 to the pi-eservation of the article, which <<intains enough sugar for that purjmse ; and 
 was prol>ably adde<l t^j the fruit, to give h keeping ((ualities, until it could »» worke<l 
 up into jelly. 
 
 The atlulterated samples may be more definitely classified as follows :— 
 
 Containing gluctwe, preservatives and dyes, Ntis. 2392.5, i'3'.)34. 
 
 Containing glucose and preservatives, jfos. 20431, 25021. 
 
 Containing glucose and dyes, No.s. 23290, 24,925.
