Zeylanioum, diiefly grown in Ceylon •»d the East Indie. ; C««i» is the bark of C. Ca^ia. chiefly grown in China and iSdii^ Ihe former bark u thinn r, lighter in colour and exieta (commeroially) in smaller rolls than CaMia bark. Prwtically Identical and, in the finely ground stite, it becomes a diflSoult, if not an impossible thing, to discriminate between them. The darker colour of Cassia is almost thTonlv distinctire character that remains. ^ Whether caMJa is inferior to cinnamon for flavouring purpoaes, in cooker}-, is an open quMtion. The general iiopreiMion is that cinnamon is preferable. Its hisher pnce 18 doubtless due to this preference At the same time it is certain that much, if not most, of the ground cinnamon of commerce, is really ground cassia. Several grinders distinctly label their goods with the word Coma ; and it is pro- bable that the same spicemen put op the market a higher priced article under the name C-mjuimon ; but of th» I have no conclusive proof. It is however .luite certain that the spice in question is known to most domestic usen as Cinnamtm ■ while the term Coma conveys a very vague meaning, or no meaning whatever. Throughout Quebec the article «8 known as Can«««, which means cinnamon as distinguished from cassia, to which belongs the tei-m Ca»»e, seldom mentioned except as a drug Lnder these circumsUnces, it will be seen that a discrimination between cinnamon and cassia, as spices, is diftieult to mainUin. It is open to question how far we may take the darker colour of caasia, as evidence of its presence. A sample of cinnamon, ground from the bark, was taken as the sUndard of colour; and amonii thirty-thre^ samples of spice bought as cinnamon, only two (2) were found to come up U the pre- pared standard. One of these was plainly labelled Cauia on the package The sample m question contains no foreign surch, or other addition, which might account for its light colour ; fo that, unless bleaching has been resorted to, we must infer that some samples of cassia are as light in colour as normal cinnamon. Thia aapect ot the matter must be left open for the preaent With a ainsle exception, no other foreign mattera have been found ; and in thia Msmple (N'a 26,045) the amount of (wheat) atareh is ao amall, aa to be negligible. As regards ash, the limit of six (6) per cent fixed by American Standard, is exceeded in six cases. I shall, however, await further experience with cinnamon, aa occurring on the Canadian market, before feeling warranted in accepting the standards iiuoted. , The work on this subject has been mainly don* by Mr. Lemoine of this Laborer tory.
