ViNCKKT, E«q., Depntj Minuter of Inkuid Bevenne, Sir, — I have the honour to hand you a report upon ninety-three (93) samples of «o called Marshmallowg (confectionery), purchased by our inspectors in May, June and July of this year. Comptaiate have been made that various confections in which whiteness is desired, and so called '< ManbmaUows " in particular, frequently contain notable amounts of sulphurous Mid and ulphites. It was with a view to asoertaininx whether or not any ground in fact existed for these comp'aints th»t the eollaction now reported was made. It is gratifying to know that dangerous ezeew of sulphurous acid has not been found in any sample. Fifty -one (-51) iiamples (ooostituting 55 per cent on the whole) are faaad to 1)^ entirely free from sulphurous ' -ind 30 others yield traces only. Twenty-two samples (23 per '">r ecrilection) cont tin disUnet amounts of sulphurous acid; but in no case does ■ • present wtceed one part in two Uiousand parts (1 in 2,000) by weight of the c i c a.
