Sir, — I beg to hand you a report upon 1X8 samples purchased for Allspice, by our inspectors throughout Canada, between August and November of last year. Instruc- tions were issued to purchase Allspice only, but through mistakes on their part, certain inspectors have obtained other spices, so that the report actually comprises the follow- ing: — (iround AlUpiw 164 HompleB. Cayenne Ptpper 10 " Paprika 5 Mixed Spicea (KTOund) 3 " ,1 (whole) 6 " 188 Allspice, Pimento or Jamaica Pepper, lias never been systematically examined in these laboratories. A few samples (If.) were reported among other spices, in February, 1904 (Bulletin No. 95). Attention has recently been called to the matter by advices of the importation into Cunada of Allspice described as "Spent" in the sense that the characteristic volatile oil, to which Allspice owes its value, had been more or less fully removed by extraction. A sample of this material, representing Customs Entry No. E, 147640 = Toronto, showed on analysis: — VolatileOil 1.72percent. Fixed Oil 6.46 Total Alcohol Extraction 11.30 The following description of Allspice is quoted from Parry, Foods, and Drugs, p. 227, and Leach, Food Inspection, p. 421 : — "Allspice, Pimento or Jamaica Pepper is th'' dried, fully grown unripe fruit of "Pimenta officinalis", a small evergreen tree n itive to the West Irdies and cultivated, especially in Jamaica. It was rei-ognized as official in the British and other phar- macopoeias, but was omitted from the fomifr in the edition of 1&14. The fruits are dark reddish brown, hard und globular, measuring 3 to 8 millimeter* in diameter. They have a wrinkled woody pericnrp on the surface of which are numer- ous oil cells containing essential oil, which gives the spice its characteristic flavour. The aroma of allspice is less pungent than that of other spices, but is like cassia and cloves. The oil resembles clove oil. In chemical composition allspice resembles cloves, also in containing a large amount of tannin, but differs in containing much starch. STANDARD. We have no standard for Canada. U. S. standard requires: Not less than 8 per cent quercitannic acid. Not more than 6 per cent ash. Not more than 0-5 ash insol. in hydrochloric acid. Not more than 25 per cent crude fibre. CHEMICAL ANALYSIS. There are very few authoritative full analyses available. The others meet the U.S. requirements for tannic acid (8 per cent) (78939 = 77 per cent). The method used here was precisely as given in U.S.A. Bulletin 107 (Revised) p. 163. Extraction with ether that had been washed with water and dried over sodium; evaporation of the ether at room temperature, drying 18 hours over sulphuric acid and weighing for total and heating to constant weight at 110° C. for non-volatile. There is certainly some loss of volatile matter, shown by discoloration of the acid of the desiccator. However, a constant weight i.- ached in the time given and experiment showed no further loss of weight in a week. Somewhat numerous check J »J dctrrininations show fair ".reementfor total extructive. The range of Tariation ii 0-S por cent and leas. But there ii the (ante or even greater variation in the flguru for volatile extractive. This is so large relatively to the small amount present as to com- promise th<5 determination utterly for any precise use. (It may be surmised that the omission of extractive from the U.S. standard may be due to its extreme variability.) The use of commercial ether gives values 0-7 lu L''35 highef for total aud non-volatile, nppiirently not affecting the volatile. Quercitu'-nic acid.
