In the latest (Eleventh) edition of tho flncyclopa'dia Britannica, vinegar is ilcfincil ns ' A dilute solution of impure acetic acid, preparetl by the acetous fermen- tation of alcohol, or of such substanies, which yield alcohol when suitably decomposed (ordinary vinegar), or obtained from the products resulting on Uie dry distillation of wond (woo. s 1 iiro been fixed for this variety of vinegar by the Department of .•\gricui'"rf rt Washington, as follows: — a. It is levorotatory. 1>. It contains not less than 4 grams acetic acid in lOOcc. c. It contains not less than 1.6 grams apple solids in lOOcc. d. Reducing sugars do not exceed 50 per cent of the weight of these solids. e. Apple ash not less than 0.26 gram per lOOcc. /. Phosphoric acid (PsOr.) not less than 10 mgr. in water soluble ash from lOOce. vinegar. g. Alkalinity of soluble asih from lOOcc, not loss than ,10cc. deci-normal. Although I am not aware that the datum has been formally established, it would appear from the findinifs in U.S.A. vs. One hundred barrels vinegar (Notice of .Judgment No. 1159) that Cider vinegar should have a glycerin content between 0-24 and 0.4C per lOOcc. Qualitative tests, such as the character of the residual solids and the ash, with regard to potash content, colour, viscidity, odour, solubility, &c., are more or less ehnracteristic. It is quite evident that Wine vinegar should not be confounded with Spirit vine- gar. This last is -he pniduct of the acetous fermentation of diluted alcohol; anl should be distinctively named. It appears, from the present report, that most of the so-called White Wino vinegar sold in Canadu is really Spirit vinegar, being made bj the acetious fermentation of distilled api -it. This is evident from the low solids and ash, as well as from other constants. The results of examination of 61 samples sold as Wine vimgar may be summarized thus: — Samplps.
