 bleacliiiiR tiie corn. 
 
 It will he noted that the <-ontent- of tiu'se cans are of very uniform weight, and 
 approximate I'o ouiici's net. 
 
 Saccharin is entirely ab.'ient. 
 
 Sulphites in more than traces are found in of samples or nbout 25 per cent, of 
 the whole niimher examined. 
 
 The last inspection of tliii article was made in 1911 and is reported in Bulletin 
 No. 2-_'t>. Thirty-one per cent of a collection of 140 samples showed sulphites to he 
 present at that time. 
 
 The following paragraphs from the introduction to Bulletin No. 226 are applicable 
 here : — 
 
 'The (pu-stioii of the use of sulphurous aeid (the acid present in sulphites) iti 
 foods i~ a very important one. Some information regarding the nuittor wil' '■<' 
 found in Bulletin 126, pp. 24-26. published in 1006. In the intervening five years, 
 n great deal of investigation has been carried on; and a good deal of legislation lui? 
 resulted, mueh of this has been proved to be hasty, in the sense of having been under- 
 taken without fidl knowledge of the matters treated, and has had to be amende<l or 
 has r.MuaiiuHl inoperative. (See F.I.D., Xo. b9. I'.S., Department of Agriculture.) 
 
 'That sulphurous acid is i, jioison. i- perfectly well ascertained but that it acts 
 deieteriously on the human system in the minute quantity present in corn, has imt 
 been demonstrated. Much of the sulphite introduced as a bleaching agent is oxidized 
 to sulphate, and thus rendered harmless. Free sulphurous acid is further got rid 'f 
 in the process of cooking the corn, and it is certain that only very minute traces can 
 remain in the article as served at the table. Wliile T do not think that we are in pov 
 session of incontrovertible evidence to justify legislative interference in the matter 
 of the employment of suliihites in food. T believe the question to be of such coiis- 
 duence as to demand further and very careful investiiration; and in the meantime, I 
 would recommend that, in all case where aeid sulphites, or udphurous aeid has 1-ecii

 I.i'iii-latinn has recently lieen recommended which requires that, when sulphu- 
 ro 1- 11 i'l for sulphites) is used as a bleach the fact of such use must be declared on 
 thr ! il.cl. 
 
 It is usual to put mp the corn with a liquid to which starch has been added. I 
 am ai.ililo to discover any intention to defraud the consumer, in this practice. The 
 -IIP li I ..iiinmnly employed is that natural to the com itself. In the light of present 
 kii vl.>i|«e no further comment upon this feature can be usefully made.

 • Dk.xii Sin.— The Board has been advised that the following situation cou- 
 friit- the canners of corn in certain sections of the country:—

 • In the opinion of the Board, on the facts as stattxl, and. if no inferiority of 
 ti!. Ill is concealed, this addition would be p«-rmitted, under regulation 25, section 
 7 I r/i. wlucli states that 'When a substance nf a recognized quality commonly u«ed 
 ill til.' preparation of a food or drug prodiut is replaced by another substance not 
 iiiiiiriiiis or deleterious to health, the minie of the substituting substance shall 
 
 11- u|«.in tlie label.' If a product, prepared as indicated, were plainly labelled 
 it ('..ni with added Starch.' there would not appear to bo any violation of the 
 iind Drugs Act. 
 
 ■ It is. however, plain to the Board that starch nuiy be added to sweet com in 
 inner whereby inferiority is concealeil. and whereby water is ailded, which addi- 
 
 ■ f starch would clearly constitute a violation of the Act. The canners are, 
 v,r. familiar witli the conditions under which they are working, and the Board 
 
 ■ t; the canners should, therefore. l)e able to decide the i>roi)er course from the 
 
 ■ statement of facts.
