Vincent, Esq., Deputy Minister of Inland Revenue, Sib,— I beg to hand you- a report upon 143 samples purchaaed throughout Canada by our inspectors, as Cassia. This spice, which finds extensive sale in Canada, has never been legally defined in such a way as to fix limiting values, and to enable us to declare its genuineaess or otherwise. Cassia closely resembles the spice known as Cinnamon, and indeed may be regarded as indistinguishable from the latter, so far as retail lapioe trade is ooncemed. Cinnt ai a drug. From an intwMting paper on the •ubject, by H. E. Sindall, Chraiirt to the Heikel and Smith Spice Co. of Philadelphia (Journal Induitrial and EnfiBMnaf Chwnirtry. 1912, 680) it appear* that the clataiflcation of the article aa Oinaamra or CaMia in oommeree depend* as much upon iU lource a* upon ito chemical or ph]rti«M '"* The Britidi Phannaoopoeia define* Cinnamon bark (Ciunamomi cortex) which is required to be free from cork or woody tissw.*, ted to contain not more than 6 per cent ash; but Casaia i* not defined by the pharmacopoeia*. . w-» So far a* our experience goes, true OinncnyDn, in the re*tncted •en»e, i* but litUe if at all employed as a *pice, in the ground condition. Under these circumstance*, it will be seen that a diacrimination between cinnamon and fia tti*, as spioa*. is difficult to maintain. It i* open to question how far we may take the darker colonr of cassia, as evidence of its presence. The difficulty of distinguishing between cinnamon and cassia, in the ground state, is recognised by the Committee of Standards at Washington, as shown by the following definitions proclaimed as legal for the United States in June, 1906. Cinnamon is the dried bark of any species of the genus Cinnamomum. from which the outer layers may or may not 'uave been removed. ., , ■ u True Cinnamon is the dried inner bark of Cinnamomum Zeylamcum, Breyne. Oaasia, is the dried bark of various species of Cinnamomum, other than Cinna- momum Zeylanicum, from which the outer layers may or may not have bsen removed. Oa**ia budj are the dried, immature fruit of species of Cinnamomum. Ground Cinnamom, Ground Cassia, is a powder consisting of Cinnamon, Casma or Ca**ia bud*, or a mixture of these species and contains not more than six («) per cent of total ash, and not more than two (?) per cent of sand. It will be noted that ground Cinnamon and ground Cassia are virtuaUy recognised as identical ; and this is in accord with actual experience. j ,. * The flavour of trie cinnamon is usually understood to be somewhat more delicate than that of Cassia; but on careful examination of the matter I am of opinion that the distinction has no v jue for purposes of a definition, « . . -i.. Aooording to accessible literature, the article shipped as Oasaia from China, Oeylon, Batavia and other sources, varies greatly in cleanliness; and it woidd seam that determination of the ash furnishes the most valuable datum in this regar^ TIm total aah in a large number of samples reported by Sindall (Journal Industrial and Eng Chemistry 1918, 690), representing extensive importations for the yew* 1908 to 1911, varied from about 8 per cent to about 18 per cent The last quoted figure is however quite exceptional, and very few samples exceeded 7 per cent. Six per cent appears to be a very reasonable maximum figure for a good article; and I have noted "ash excessive" in samples now reported, wherever the total ash exceeds 6 per cent or the insoluble ash (sand) exceeds 9 per cent Twenty two (22) samples show ash in excess of the suggested standard.
