 Under this heading, as occasion ariaee, the Bulletins issued by this Department 
 will contain, as an appendix, such comment as may seem necessary or advisable upon 
 matters relating to the worit of the Department in connection with the administration 
 uf the Adulteration Act, the Fertilizers Act, the Feeding Stuffs Act or the Proprietary

 Acts, of such nature that the matter in question possesses general interest, and

 1 y the use of different methods. Air drying at 70° V. was used at Vancouver whereas 
 ilii' rcfractometer in conjunction with Oeerlig's table was employed here and at Halifax.

 It all the laborat'iries under this Department. TJeferee work witli molasses has shown 
 tlio refractoineter to give ainsi.stently good results for water and solids, ease of manipu- 
 lation, speed, accuracy, small quantity needed, render it a much more desirable 
 niithod for routine work than air drying. 
 
 The mo'st probable explanation of the variation of the sucrose numbers, lies in the 
 'iinliility of refineries, etc., to obtain a uniform product. 
 
 The examination of the sulphur dioxid.-" content shows that, of the 07 samples 
 '''>toil, none contain this bleaching agent i quantities sufficient to be designated 
 njiirioua. Only eight (S) samples contain above 0.1 part of SO, expressed in parts 
 ■'•r 2.000, the highest being 0.2fi4 part per 2.000. The United States limit expressed 
 ill these terms is O.fi part per 2,000. The distillation method was used, absorbing in 
 'loci-normal iodine, l)oiling off the ifxline and precii)itating with barium chloride, 
 iiicineratirip and wciphing as barium sulphate.

 O/MfOdc— Kegarding the (xjssible adultiratiou with (glucose: some time was 
 spent on this at first iwlarizing the inverted solution at ^T" C. The appamtus used did 
 not includo a constant high temptrature bath for iMilarizing, but even the imperfect 
 adaptation ufied, shows that the method is f.. 1h> reconnnendiHl as giving a chwr 
 approximation to the glui'os*. i-ontent than tlic Lench formula, which does not re<iuire 
 polarizing at IiIkIi temperature. 
 
 Theoreticiilly. pure molasses should show no optical rotation pt 87° after inversion, 
 but as a matter of fact, there i.s nearly always n slight dextro-rotation. An average 
 invert ix.larizatioii of i:j samples k'ing +:',-0->. This is verified by A. H. Bryan whose 
 r. suit* on IH siiniples of niolasw-s of known purity gave an averagp polarization at 87° 
 of +2..'i.1. ranging fnmi 0.<) to +4-1S or an oiiuivalont of to 25 per cent of glucose. 
 
 ■'Dextro-rotation is undtiubtedly ciiiise<l by some form of decomposition or fermen- 
 tation. It may bo due to a preixinderanee of dextrfisc in the reducing sugars, since 
 levuloso is more easily decomix.sed than dextrose, iir it may be caused by the decompo- 
 sition products formed when the raw .juice is lieiiig defecated with lime, or again it 
 might \>e caused by a special fermentation forming dextrnn ". (Leach, page 623). 
 
 In order to determine flic reliability of this high temperature polariMtion in 
 estimating glucose, some investigatory work was done, using a stimple of molassej* with 
 which commercial glucotie was mixed in varying proportions.

 Stt Weight. — In only one sample has the net weight been found appreciably below 
 ' laim, i.e.

 Snmmarji. — It is suggested that: 
 
 (1) Watt-r and ash content lie fixed. 
 
 (2) If glucose be proitcnt, it should be declared on the label and if such a 
 molasses-glucose mixture be sold from puncheons to the consumer, that 
 some effective meanii be taken to inform the buyer as to what he is buying. 
 
 (•1) That the sulphur dioxide content be li'nited. 
 
 It is not considered advisable to put a limit oi. the sugar content because of the 
 II lolutiouary nature of such an action on producers, especially the smaller ones with- 
 in thoniical control, and nl*. because any such limit would, at best, be somewhat 
 iirliitrary. A low fixed ash will, t« a certain extent, eliminate the most objectional 
 -lades, while a glucose regulation will protect the public against mixtures that 
 iiuH(iuera<le as molasses.
