The remaining two samples are ordinary table waters of pood quality. Of the great nmjority of these san>plos of soft drinks it may be said that they are essentially solutions of supir in varying amounts (fr.,n> 1 to 10 per cent) flavoured with various essences or fruit flavours (mainly artificial) and impregnated with carbon dioxide (carbonic acid gas) under pressure. All attempts to find a specific character for Ginger A!e, Ginger Beer, Lemon Sour, &c., from the numerical results of aualysis, fails utterly. These bev-eragea are cvidentlv prei.ared according to no generally a.-cepted formula, but depend for their character upon the fancy of the manufacturer. It cannot bo said that they are harm- ful; and so lou^' as they meet a popular demand for a sweetened effervescent drink, no objection to them can be taken. The presence of salicylic acid, to i)revent fermentation of the sugar, is noted in thirteen (I.'?) samples; but the amount is not excessive in any case. Sac harm (used as a partial substitute for sugar) is found in thirty-four (34) samples. Objection has been taken to this article as a sweetener by the United States of America (see Food Inspection Decision V'-. i4l>, of Man-h. 101L>), but the evidence of its harmfulness does not appear to b Ir.cing. Under Food Inspection Decision No. 146, of July, 1012, the Uiiitetl States c, America permits its pre' :i<-o in certain classes of food, but require- do(--lHruti..i' m,' the c=cnce of Sacchari 'he label.
