Bread will be ready to bake by 8 o'clock. MRS. H. R. Chocolate Bread. 1 cup sugar, 42 cup butter, 2 well beaten eggs, 12 cup flour, 1 cup nuts, 2 squares melted chocolate. Bake in slow oven. MRS. A. I. GUSTAFSON. Soda Biscuit. 1/2 teaspoon soda sifted with 1 quart of flour. Rub into this 1 large spoonful of shortening and 1 teaspoon salt. Sour Milk Biscuits. 4 cups sifted flour, 12 teaspoon salt, 1 teaspoon soda, 8 level teaspoons baking powder; sift all these together. Add 2 cups sour cream. Baking Powder Biscuits. 2 cups flour, 2 teaspoons sugar, 2 teaspoons baking powder, 12 teaspoon salt, 1 tablespoon lard, 1 cup sweet milk. MRS. G. A. STEVENS. Graham Baking Powder Biscuit. 3 cups graham flour, 1 cup white flour, 1 egg, 1 table- spoon shortening, 1/2 cup sugar, 1 teaspoon salt, 4 level teaspoons baking powder. Mix soft, roll thin, and bake in quick oven. MRS. W. J. CELLIER. Date Biscuit 2 cups flour, 1/2 teaspoon salt, 4 teaspoons baking pow- der, 1 tablespoon butter, 34 cup cream or milk, dates. AXTELL DRUG COMP. 32 Grind meat twice. Mix ingredients thoroughly, form into loaf, put a little egg and crumbs on top. Bake 1 hour. MRS. PHILLIP SWANSON. Veal Croquettes. Boil a knuckle of veal until meat falls from bone. Chop meat fine and mix with 1 cup boiled rice. Dissolve 2 table- spoons flour in 2 tablespoons hot butter in a saucepan. When well cooked add 1 cup of veal stock, and when it begins to thicken add meat and rice, salt and pepper. Boil 2 minutes, then add 3 well beaten egg yolks. Pour into a greased dish to cool. When the mixture is cold form into small cubes, roll in cracker crumbs, then roll in beaten egg whites and again in crumbs and fry. MINNIE PETERSON. Brine for Meat. 5 gallons water, 4 pounds salt, 2 pounds brown sugar, 12 ounce saltpeter. Boil all together and let cool. Rub meat with fine salt and pack closely in a jar. Leave in brine 6 weeks, take out, drain, and smoke. If meat is to be used for frying, leave in brine only 2 or 3 weeks. MINNIE PETERSON. Beef Steak Roll. Take a piece of round steak and after pounding it a little, spread over it a dressing made as for turkey dres- sing. Place in a roasting pan with a little water and cover. When nearly done remove cover and brown. MRS. K. G. WM. DAHL. Southern Chicken. Cut up chicken and place pieces in a covered baking dish with 2 or 3 cups of water and 1 tablespoon butter spread over chicken. Cook 1 hour, basting often. Add 1/2 sliced onion, 1/2 teaspoon salt, 1/2 teaspoon pepper and cook a little longer. Remove chicken from dish and add to gravy made of a cup of milk thickened with flour. Strain gravy over chicken and serve with tiny baking powder biscuits. MRS. K. G. Wm. Dahl. 48 Prune Salad. Wash, soak, and steam 1 lb. of prunes until tender. Do not sweeten them. When cold remove the stones and fill the cavities with chopped walnuts. Arrange some lettuce leaves on individual dishes, place 5 prunes in the center, sprinkle over with lemon juice, and place 2 tablespoons of mayonnaise on top. Serve very cold. MRS. C. V. JOHNSON. Fruit Salad. Cut in small pieces, — 3 apples, 2 or 3 bananas, add a little celery and chopped nuts. Mix with salad dressing. ESTHER SWARD. Stuffed Tomato Salad. 6 ripe tomatoes, 2 cucumbers. Scald tomatoes to re- move skins easily. Cut a slice from top of each and with a small spoon remove inside pulp and seeds. Peel cucum- bers and cut into dice. Season highly and mix with half the dressing. Fill tomato cups with this, place spoonful of dressing on top, sprinkle with finely chopped parsley. Serve on lettuce leaves. Requires 1/2 pint cream dressing. MRS. O. G. BERG. Cucumber and Tomato Salad. Arrange sliced tomatoes on a bed of lettuce. Pile on each slice, cucumbers cut in small squares. Serve with dressing MRS. O. G. BERG. Molded Fruit Salad. 2 tablespoons gelatin, 12 cup cold water. Set in pan of boiling water. Add 34 cup sugar. Let cool. When cold add: whites of eggs, 1 cup white grapes, 1 can grated pine- apple, 1 cup whipped cream. Mold in cups. When stiff serve on lettuce leaves with following dressing. DRESSING. Juice of 2 oranges and 2 lemons, 12 cup sugar, 1 tea- spoon cornstarch, 1 teaspoon butter, 2 beaten eggs. Cook in double boiler. When ready to serve add 1 cup whipped MRS. PHILLIP SWANSON. cream. Gooseberry Cream Pie. 1 cup sweet cream, 1 cup sugar, 1 tablespoon flour, 1 cup stewed gooseberries. Mix sugar and flour, add cream, then berries. Mix well and bake in double crust. Favorite Chocolate Pie. 1 cup sweet milk, 1/2 cup sugar, 2 tablespoons grated chocolate, 2 tablespoons flour, 1 teaspoon vanilla, yolk of 1 egg. Heat milk and chocolate and add other ingredients. Cook until thick. Pour into the baked crust, frost the top and brown lightly in a quick oven. MRS. S. TONNEMAKER. Vinegar Pie. 142 cups sugar, 3 tablespoons flour, 3 tablespoons vine- gar, 1 tabespoon lemon extract, yolks of 3 eggs. Chili Sauce. 18 large ripe tomatoes, 6 medium sized white onions, 6 sweet red peppers (with most of seeds removed), 5 teacups vinegar, 3 tablespoons salt, 10 tablespoons sugar, 1 tea- spoon paprika. Chop all fine and cook together 3 hours or until thick. MRS. CHURCH. Chutney Sauce. 4 bunches mint, 12 ripe tomatoes, 6 small onions, 1 lb. apples, 3 red peppers, 1 lb. sugar, 4 tablespoons salt, 1 oz. mustard seed. Grind all together in a meat grinder. Add 3 pints boiled vinegar. Mix well and stir every day for a week or ten days. Do not cook. Bottle. MRS. F. CHURCH.
